Beef Shirataki Noodle Stir Fry with Kai Lan

This dish is a quick and easy lunch or dinner option with enough flavor and nutrition to be eaten multiple times a week. Shirataki Noodles are translucent, jelly-like noodles made traditionally from the konjac yam. These noodles are sometimes called miracles noodles, because they are very low in calories and only contain 4-5 grams of carbs per serving. Other renditions of this noodle have also been made with soy, and they are deemed tofu shirataki. These noodles are great for when you are watching your carb intake or if you would like to eliminate some calories from your diet. With the noodles and meat in this dish, it is filling and the carbs are not even missed. The recipe yields one portion and is as follows:


The ingredients:

1 pkg shirataki noodles

1 tbsp garlic, minced

1 tsp ginger, minced

1 tsp Chinese 5 spice (cinnamon, cloves, fennel, star anise, and Sichuan peppercorns)

2-4 oz ground meat: beef, turkey, chicken, lamb, etc.

2 tsp soy sauce

2 tsp chili oil (if no chili oil use 1 tsp Chili flakes and 1 tsp sesame oil)

2 tbsp water or stock

Salt and pepper tt (to taste)

1 tsp garlic powder(optional)

4 oz green vegetable of your choice

1 ea green onion, sliced


Procedure:

  1. Remove Shirataki Noodles from the package and in a colander rinse the noodles thoroughly.

  2. In a nonstick sauteuse on medium heat, sauté garlic and ginger together and slightly brown.

  3. Next add in ground meat and 5 spice and stir-frying while breaking it up the meat until it is 50% cooked.

  4. To the meat add soy sauce, chili oil, and stock, then let it simmer on medium-high until most of the liquid had evaporated and the oil starts to sizzle.

  5. Once the meat is almost dry adjust seasoning with salt and pepper. At this stage, Make sure you do not over-salt the meat, so taste before you season. Also if you feel the dish needs additional flavor add in the garlic powder at this stage.

  6. Mix Shirataki noodles into a meat mixture and cook on medium-low until all the noodles are warmed and seasoned through. Taste a noodle to check its seasoning.

  7. To prepare the vegetable, in a small sauce pot boil salted water.

  8. Once water is boiling, add in your vegetable. Your choice of vegetable will determine the cooking time, so look for bright green color and a slight crunch to the vegetable. You will know it is overcooked if the vegetable becomes a dull green or has a slimy texture.

  9. Serve noodles with green vegetables and green onions as a garnish.
