Bacon Wrapped Green Beans with Brown Sugar Butter Sauce

This is probably one of the only family recipes my mother passed down to me. My mother is not a big cook ,but every holiday season, she whips these out for family gatherings. This dish is very simple being only bacon, green beans, and a brown sugar butter sauce, but that is what makes it so delicious. Since the recipe is so basic, it is easy to substitute out ingredients. For example, if you do not eat pork, turkey bacon is a good substitute. Maple syrup or honey can be used instead of brown sugar. And even if you are vegetarian, meatless bacon would taste great with this sauce. This recipe is highly adaptable ,so if there's a tweak you would like to make try it out. This dish is my favorite to eat around the holidays and I hope you can all enjoy it as much as I do.

Yields: 48 bundles

Ingredients:

24 ozs of bacon

2 lbs of green beans, trimmed

½ cup butter, sliced

½ cup brown sugar

1 tbsp garlic salt


Method:

  1. Preheat the oven to 350F.

  2. Boil salted water in a medium sauce pot, and then cook the green beans for about 3 mins or until they are halfway cooked. Taste one to check donessess. Shock them in ice water to prevent them from continuing to cook.

  3. In a microwave safe measuring cup, put in the butter and brown sugar and microwave in 30 seconds increments until the butter is melted and the sugar is dissolved. Should take around a 1 minute and half. Reserve this sauce.

4. Cut the bacon in half and place green beans in a bowl. For each bundle grab a half slice of bacon and around 5 beans and place them at the end of the bacon strip. Roll the beans up in the bacon and place into a casserole dish.

5. Once all the beans are rolled and placed in the casserole dish sprinkle with the garlic salt. Make sure to get it all over and not condensed in one area. Then pour the sauce evenly over the bundles.



6. Bake this dish for around 30- 40 minutes. Checking it half way through to see how the bacon is cooking. It is done with the sauce is bubbling and the bacon is crisp.


7. When it is done, pull it out of the oven and serve warm with some sauce drizzled over top.

I love this dish, it is simple but very tasty...thank you for sharing this recipe..it will definitely be on my Christmas dinner menu ;-)
