15 minute banana pancakes

A healthy and quick an easy breakfast, lunch, or snack

Banana Oat Pancakes

These pancakes are a healthier alternative to the traditional pancakes, because they use oats and bananas as their main ingredients. They are also easier to make, because unlike regular pancakes, they require no hand mixing; just a blender. These pancakes have the same great flavor as banana bread, but only a fraction of the calories and sugar. Making this recipe is simple, so it is good for busy mornings or a post workout meal. These banana pancakes can also be made ahead of time and frozen, then reheated for later consumption.


Ingredients (for 1 portion):

1 medium banana

½ cup oats (old fashioned or instant)

1 tsp honey

1 tbsp yogurt

1 egg

1/2 tsp cinnamon

1 tsp baking powder

cooking liquid: butter/ oil (optional)


Method:

1. Put all the ingredients together in a blender, and blend until it is a smooth consistency like cake batter. It should have little to no lumps, because the oats will break down.

2. Once batter is smooth, heat a nonstick sauteuse to medium heat. If you like your pancakes to have crispy edges, you can added oil or butter at this stage; otherwise, no fat is needed.


3. Once pan is hot, pour about 2 tbsp of batter into the pan to form 4 inch circles (smaller pancakes faster cook time). Cook only two or three pancakes at a time. When bubbles form on top of pancakes, they are ready to flip.

4. Once pancakes are flipped, they should be golden brown on the top, then they will cook for an additional two minutes.


5. Once all pancakes have been cooked, serve on a plate with syrup.
